Tom,

Would it not be easier to just use the Mirror function to allow the new and old server to self-sync?  Let that run for some time (depending on how many mails, users etc), but once synced, just swap master/slave and continue on?

Stop Surgemail service on Old Server.

Rename New Server to Old server name and Change IP address to Old Server address
Turn off Old Server
Restart and / or start Surgemail service.
Test sending and receiving mail.
Check logs for mail flow etc.
Check with offsite mail server re any held mail.
