Simple example below:
ssl/      <--- default ssl here
ssl/domain1/  <--- domain1 ssl here (same as default)
ssl/domain2/  <--- domain2 ssl here
ssl/domain3/  <--- domain3 ssl here

When hosts unaware of SNI connects it see domain2 ssl (while asking for domains 1):

My question is again, how to force/set default SSL for hosts unaware of SNI
