Not sure what the issue may have been but it seems to be rectifying itself. From reading the logs and I have to make an enquirey with one of my users, for some reason his email account dumped a huge amount of mail into his system. It may simply be it was trying to mirror all these and the system was slowed down. Through this event I have started to read the log files more and it all seems to make a bit more sense now.
