The setting is: G_SPAM_ALIAS_ANY "+" (only valid if no existing email addresses contain a plus, otherwise maybe use ++) I would hesitate to enable it but it depends on your users a bit. I. e., is it possible to have email for joe+urgent@example.com joe+somewebsite@example.com be delivered into the joe@example.com inbox, where it can be filtered by server- or client-side rules? This is a popular feature supported by Gmail, FastMail, Outlook.com and many others, and is useful for managing email from spammy senders.
