Looking at Thunderbird and Outlook, it appears that it is up to the mail 
client to put the copy in the sent folder.  With Thunderbird, you can 
turn this on or off and select the folder to store the email in.  In 
Outlook, you can turn this on or off, but can not select the name of the 
Sent folder.

I don't know Apple Mail, but based on what I see in Thunderbird and 
Outlook, I would expect the same behavior with saving sent messages from 
Apple Mail.
