I will throw in my 2 cents on this one. As a virtually all Linux shop, I would recommend CentOS 6 (6.3 is the current release) or Ubuntu Server 12.04 LTS. Both OS's are intended to be long term releases (5 year lifecycles, I believe). I use CentOS for most general purposes, including hosting SurgeMail. This is because I am familiar with the configuration and RPM package management and the availability of certain software in RPM packages. However, both OS's are fairly easy to setup and well supported. That being said, "simple" is a relative term. Setting up DNS, or any service for that matter, can be very simple or very complicated, depending on your requirements. I perform all my Linux administration using a shell interface (i.e. no GUI). However, many of the services that we run have web interfaces rather than GUI interfaces, which simplifies administration. The only thing you can do it try it. Download a copy of CentOS and install it on a virtual machine. Play with it. See if it works for you.
