Using 32 bit Linux and the PAE kernel, 4gb - 8gb will run a Surgemail operation that can handle hundreds of thousands of SMTP/POP3 emails per day easily but don't forget the CPU's !! Note also that Linux scales CPU's / cores far more efficiently than win does. A pair of dual core XeonsHIDDEN@z will provide way more than enough cycles and plenty of reserve.
